Vegetarian Meatloaf

A meatless meatloaf that can be put together quickly and in the same loaf pan you bake it in.

Bake 350  Time 65 – 70 min.

Serves 4-5

Ingredients:

16 ounces cottage cheese

4 eggs, beaten

4 oz. baby bella mushrooms, diced

2/3 cup celery diced

1/4 cup vegetable oil

1 envelope dry onion soup mix

1 cup chopped walnuts

2 cups Special K cereal

1/2 teaspoon black pepper

1/8 teaspoon cayenne pepper

Topping (optional):

Add 1/2 cup of bbq or tomato sauce.

Directions:

Spray or lightly oil a standard loaf pan.  Combine and mix all ingredients listed above except the topping. Form the mixture into a loaf.  Top with bbq or tomato sauce if you like.

Bake 65 – 70 minutes or until the loaf is firm and a knife inserted into the middle comes out clean when inserted.

When baking is complete, let the loaf cool for 10 minutes. Slice and serve!

This is not meatloaf, there is no meat. It is a veggie loaf. Lets be honest.
