Mandarin Poppyseed Dressing/Marinade

I took a look in the pantry and pulled out some ingredients I thought would go well together as a salad dressing and or also make a flavorful marinade for grilled veggies, chicken, fish or pork.  This  combination of ingredients created a dressing and also a marinade with just enough tang to balance out a salad and also a great contrast for grilled main dishes.

Prep Time:  5 minutes

Category:  Vegan Salad Dressing/Marinade

Cooking Method:  no cooking required of dressing/marinade

Serves:  4 for multiple uses during the week.

Equipment:  Blender or Vitamix

Ingredients:

1 cup  Olive Oil

1/3 cup red wine vinegar

1/4 cup honey

3 oz. mandarin oranges ‘snack size'  in light juice

1/8 cup honey mustard

1/3 teaspoon ground black pepper

2 teaspoons bottled spice: poppy seed

Directions:

Combine all the ingredients in a blender or Vitamix and whirl for a minute to combine.

Use as a salad dressing, marinade or drizzle over grilled veggies, chicken or fish.

Store left overs in a closed container in the fridge for up to a week.  Bring the dressing to room temperature and shake to combine ingredients as needed.  Alternate uses:  Combine 1 part mayonnaise to 1 part dressing and stir to combine.  Use as a vegetable dip for raw veggies or steamed artichokes or as a sandwich dressing spread!
