 Vegan French Toast

This breakfast idea can be prepared easily on your stove top or in a skillet on the grill. Top the French toast with some fresh berries for a camp friendly breakfast.

Serves 2


2 slices of thick bread – Set aside

1/2 cup non dairy milk
1 1/2 teaspoons ground flax
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

2 tablespoons earth balance butter


Mix together in a medium shallow bowl the non dairy milk, flax, cinnamon and nutmeg. Let mixture rest for 4 minutes then add bread slices (one at a time) into the liquid mixture until liquid is well absorbed on both sides. Add earth balance butter to the skillet and cook over medium direct heat until both sides of the French toast are cooked through in the center and browned on both sides. Serve with fresh berries or syrup.
