RV Recipe: Coconut Milk Chia Seed Custard

When you are craving a little guilt free snack or dessert in the RV, whip up this delight in a matter of a few seconds…. then place the custards in your RV refrigerator to set for 2- 4 hours!  I found that the Silk brand coconut milk is preferable to the Costco organic coconut milk as the Silk brand is naturally thicker.

Serves 4

Ingredients

8 oz        coconut milk

4 tbsp.    chia seeds

1 tsp       cinnamon sugar or other flavoring (optional)

Directions

  1.  Rinse 4 4oz. containers and lids, set aside.
  2.  Pour 2 oz of coconut milk into each container.
  3.  Add a tbsp. of chia seeds and optional flavoring of choice.
  4.  Place the lid on the container, shke each sealed container a few times  then place the containers in the fridge for 2 – 4 hours to set the custard.

Creating quick simple easy to prepare snacks and meals while traveling in an RV can be downright easy and healthy all at the same time!
