Orange Zest cake donuts

My sister is visiting from Bielefeld Germany and was craving a donut that was an old childhood favorite… an orange glazed cake donut.  She stopped into a donut shop and they let her know that they make 2 – 3 a day and that the next ones would be available in the morning.  Decided I could whip these up for a treat.

Ingredients:

1 box Pillsbury Hot Roll Mix

1 egg

1 cup hot water (120 – 130 degrees)

2 tablespoons sugar or sugar substitute

2 tablespoons soft butter for the dough

4 tablespoons soft butter for the frosting

zest of 4 oranges

juice of 1 orange

2+  cups vegetable oil

Iron Skillet

Make the dough using the recipe on the side of the box that is for making cinnamon rolls, using the first 5 ingredients listed above.  Follow the directions for kneading and rest the dough and then forming the rolls.  Roll the dough between the palms of your hands to make a hot dog like cylinder of dough and bring the dough together connecting the ends to form a doughnut shape.  Let the dough rest again as directed.

Heat oil over medium high heat 1/2 way up the side of a cast iron skillet. Do not let the oil smoke.  When the oil is hot, drop in 1 donut.  If bubbles form at a medium to medium high rate around the dough, the oil is just right.

Let the donuts cook in the oil for about 3 minutes each side.  Lift 1 end of the donut with tongs to check doneness after 2 minutes to check the level of browning.  Flip the donut when it is medium brown and cook the other side of the donut for a similar amount of time.  Remove the donut from the pan onto a paper towel and cooling rack.

You can now make 3 – 4 donuts at a time as above.

Glaze:

Combine 1/3 of the orange juice with 2/3 – 1 cup powdered sugar to form a glaze and drizzle the glaze over the donuts, then combine 1/3 of the juice with additional powdered sugar to form a medium consistency glaze and drizzle over the donuts. Next combine the last 1/3 of orange juice with 4 tablespoons of butter and additional 1/2 cup of powdered sugar to form a frosting.  Drizzle over the donuts.  Zest again with orange peel if desired.

* Omit glaze and frosting to decrease the sugar or google a sugar free frosting recipe that you like!
