The Ultimate Camping Meal: Turkey Vegetable Stew

We are all looking for a camping meal that is easy to make so we have more time to enjoy the outdoors. Jennifer just tried a new recipe that has to be one of the easiest and most delicious camping meals we have ever tried! Turkey Vegetable Stew.

We had a lot of fun making this in our RV in our slow cooker, aka Crock Pot. There was a slight mixup in the cooking when we found that we needed a bigger cooker for this recipe. But that was part of the fun.

You can cook this camping meal while you drive!

That's one of the neatest things about Crock Pot meals. You can cook them as you drive. We put the cooker in the galley sink, so it does not slide off the counter as we are driving.

If you need to extend the reach of the power cord for the cooker, only use one of those power strips that have a very heavy gauge wire, as we show and explain in the video.

But there is nothing like driving you your destination as your meal cooks next to you, filling the RV with delicious aromas!

This camping meal needs a 4 qt slow cooker!

If you watched our video, you'll see how we started with a 3 qt Crock Pot. That's our favorite size, just perfect for two people. But the ingredients for this turkey vegetable stew camping meal soon filled it up and it became more than evident that we needed a bigger cooker.

Fortunately, we were close enough to our home to get the 4-quart slow cooker we also have in our sticks and bricks kitchen.

It was the perfect size.

Here's the recipe for this Turkey Vegetable Stew Camping Meal

Ingredients

  • 6 carrots, peeled and cut into chunks
  • 6 medium potatoes
  • 2 onions, peeled and cut into chunks
  • 2 boneless, skinless turkey tenderloins, frozen
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon hot pepper flakes )optional)
  • 1 teaspoon salt
  • 13 ounces no-salt-added spaghetti sauce
  • 2 cups water

Directions

This meal can be made ahead of time, at home before you set off on a trip; on the road as you travel as long as you have your inverter on with AC power at the outlets; and at the campground.

  • Wash and scrub potatoes (peel if not organic), cut into quarters, and place in slow-cooker.
  • Chop and add carrots, onions, and two frozen turkey tenderloins to potatoes in slow-cooker.
  • Place remaining ingredients into slow-cooker in the order listed and mix slightly.
  • Cook on high for 7 hours or low for 10 to 11 hours.

What is the most amazing this we found about this meal – besides the phenomenal flavor and aroma – is how healthy it is. Just 275 calories per 8 oz serving! We think it pairs best with a nice, big, crusty slice of whole wheat or multi-grain bread.
