Oat bran raisin muffins

Delicious moist muffins that are low in fat. Great in the morning with a side of fruit and a cup of coffee or tea!

Pre heat oven: 400 degrees.  Makes: 14-16 muffins.

Ingredients:

2 cups oat bran

2 cups whole-wheat flour

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon table salt

1 cup molasses

1 1/2 cups plain non fat yogurt

1/2 cup unsweetened applesauce

1/2 cup vegetable oil

4 egg whites

1 cup raisins or dried cranberries

Directions:

In a large bowl, combine oil, egg whites and molasses, then add in the applesauce, yogurt and raisins.  In a separate bowl combine all the dry ingredients, mix well.  Fold dry ingredients into the wet, stir to combine.  Pour into greased muffin tins or paper cupcake liners placed in the muffin pans.  Bake approximately 15 minutes.   Muffins should spring back slightly when pressed from the top.
