S’More Chocolate Pudding Regular or Vegan [RV Recipe]

If you like to have a sweet treat available for dessert or a snack while camping… S'more Chocolate Pudding is an easy one to put on the menu plan. 

For convenience:  You can purchase ready made refrigerated and or the shelf stable type to store in your RV fridge or pantry and then kick it up a notch with some toasted mini marshmallows and graham cracker crumble!

What about a Vegan option?

The recipe below provides adaptations that make this tasty treat Vegan while still creating a familiar tasty treat.

Wanna ‘kick up' the pudding selection a notch?  Ghiradelli has an instant chocolate pudding that is low in calories and  requires just a brief whisk and adding some milk, portion the servings in a ramekin and ‘chill'.  Then add your topping of mini marshmallows, singe the marshmallows with a long neck lighter and sprinkle on some crushed graham cracker crumbs.

If you have more time to spare and like truly homemade pudding, I've included a recipe below following the history of pudding.

The history of pudding

Pudding is a type of food that can be either a dessert or a savory (salty or spicy) dish that is part of the main meal.  Pudding (savory type) was first introduced in the 1st century BC.

The modern American usage of the word pudding to denote primarily desserts has evolved over time from the originally almost exclusive use of the term to describe savory dishes, specifically those created using a process similar to that used for sausages, in which meat and other ingredients in mostly liquid form are encased and then steamed or boiled to set the contents. 

In the United Kingdom and some of the Commonwealth countries, the word pudding is still used to describe both sweet and savory dishes. Unless qualified, however, the term in everyday usage typically denotes a dessert; in the United Kingdom, pudding is used as a synonym for a dessert course.  Dessert puddings are rich, fairly homogeneous starch- or dairy-based desserts such as rice pudding, steamed cake mixtures such as sponge pudding with or without the addition of ingredients such as dried fruits as in a Christmas pudding.  Savory dishes include Yorkshire pudding and other heavier unsweetened pudding dishes.

In the United States and Canada, pudding characteristically denotes a sweet milk-based dessert similar in consistency to egg-based custards, instant custards or a mousse, often commercially set using cornstarch, gelatin or similar collagen agents in the Jell-O brand line of products.

In Commonwealth countries these puddings are known as custard (or curds) if they are egg-thickened, as blancmange if starch-thickened, and as jelly if gelatin-based. Pudding may also refer to other dishes such as bread pudding and rice pudding.

What about Marshmallows

It is not known exactly when marshmallows were invented, but their history goes back as early as 2000 BC. Ancient Egyptians were said to be the first to make them, and eating them was a privilege strictly reserved for gods and for royalty, who used the root of the plant to soothe coughs and sore throats, and to heal wounds.

When did graham crackers get introduced in the markets?

Graham crackers have been a mass-produced food product in the United States since 1898, with the National Biscuit Company  being the first to mass-produce it at that time. The Loose-Wiles Biscuit Company also began mass-producing the product beginning sometime in the early 1910s. The product continues to be mass-produced in the U.S. today.

Homemade S'More Chocolate Pudding Recipe 

*Vegan options listed below

Ingredients

1/2 cup regular or vegan beet sugar  

1/3 cup unsweetened cocoa powder

1/4 cup cornstarch

1/8 tsp salt

2 cups milk or vegan unsweetened almond milk

1 tsp vanilla extract

Toppings

marshmallows (vegan or regular or even homemade varieties you make in advance of a camping trip)

graham crackers –  crush 1 – 2 squares to make a crumble topping

Pudding Directions

1. In a medium saucepan whisk in beet sugar, cocoa powder, cornstarch and salt.

2. Add almond milk to the saucepan, whisk until no clumps remain from the powdered ingredients.

3. Bring pudding to a boil over medium heat, whisk as needed to prevent scorching of liquid on the bottom of the pan.

4. Boil the pudding for 2 minutes, whisking constantly until pudding thickens.

5. Pour pudding into individual ramekins, lightly cover the ramekins with saran wrap and place in the fridge for 2 hours to allow the pudding to set.

6. Top with mini marshmallows and non honey vegan style graham cracker crumbs.  Vegan mini marshmallows are available on Amazon and in some stores including Walmart.

7.  Mini marshmallows can be torched lightly with a long neck lighter like – Super Striker  Wind Resistant
