Baked Quiche

Preparing a quiche while camping can be a tasty breakfast option.

Ingredients:

1 pre-made pie crust in a tin (freezer section of the market)
3 large eggs
1 cup buttermilk
1/3 cup grated goat cheese
1/2 cup diced orange bell pepper
1/2 cup diced ham
1/4 teaspoon kosher salt
1/4 teaspoon ground pepper
1     large tomato, diced and seeded
2 oz. unsalted butter, diced

Directions:

Bake unfilled pie crust for 8 minutes at 400 degrees.  In a medium bowl, whisk eggs and buttermilk together. Add remaining ingredients and pour into pre baked pie crust. Turn oven heat down to 325 degrees.  Bake quiche for approximately 40 minutes or until the custard is set and the top of the quiche is slightly browned.  Remove quiche from the oven and sliced and serve after the quiche has rested for 10 minutes.
