Parmesan Tomatoes

Grilled Stuffed Tomatoes
A quick tasty side dish that is simple to prepare. The tomato can serve as an edible bowl and filled with any one of a number of ingredients. Some ideas for tomato stuffing: cooked rice, couscous or a parmesan mayonnaise as listed below. Substitute the cheese and mayo for vegan friendly ingredients as desired.

Serves 2
Ingredients:
2 medium sized tomatoes
*flat enough bottoms that stand upright
3 tablespoons mayonnaise
1/4 cup grated parmesan
Salt and pepper to taste
Directions:
Cut the upper part of the tomato to remove the upper 1/4th portion. Scoop out the seeds with a teaspoon. Place the tomatoes face down in a small bowl for a few minutes, then drain the remaining juices by squeezing the tomato slightly. If the center core is rigid remove a portion of the core or score it with a knife. Fill the tomato with the parmesan/mayonnaise mixture. Shave additional parmesan on top just before baking. Place in a small cast iron pan over direct heat on high for approximately 5 minutes or until the cheese is melted. Serve as a side dish.
alternate: rather than mayonnaise and parmesan cheese, substitute chunks of blue cheese inserted into the seeded tomato and top with dried bread crumbs drizzled with a small amount of olive oil and grill as above.
