This is an easy tasty appetizer that comes together quickly and with just a few ingredients. I was able to get all of the ingredients on one shopping trip to Trader Joe’s. Consider this crowd pleasing small bit appetizer for an upcoming family or friend gathering. These ingredients are camp friendly and the appetizer not only looks great, it tastes delicious! This is a new fun ‘go to recipe’ that I get great reviews on. It is simple, yummy and well received by guests. As a vegan alternate… simply substitute the goat cheese for a vegan friendly alternate.

1 package (approximately 1 cup) of dried apricots
1 3 oz. creamy goat cheese
1 small bag (approx. 2/3 cup) of Marcona Almonds. (I used truffle salted variety).
1 squeeze bottle of honey
Place apricots flat in 1 layer on a cutting board. Cut the top portion of the apricot off, or if they are thick cut them in half horizontally. Place a dab (~1/2 teaspoon) of creamy goat cheese atop each apricot, onto the cut open portion of each apricot. Top the goat cheese with 1 whole marcona almond on top of each goat cheese covered apricot. Drizzle a small amount of honey zig-zag style over the almond on each appetizer.
Transfer to a platter and serve.
