Lime Ginger Thai Salad Dressing

I came up with this salad dressing to serve with a main course salad for dinner.  The dressing is light and refreshing… perfect dressing for warm weather!  

Serves 2 

Ingredients

1/4 cup        fresh lime juice

1/4 cup        bottled fish sauce (Asian aisle of grocery store)

5.3 oz         single serving Greek yogurt with honey 

1/2 cup      fresh cilantro, rinsed, chop finely

4 tsp           red pepper jelly

1 clove       garlic, minced

1 tbsp       peeled, freshly grated ginger

Directions

  1.  In a medium bowl, whisk together the dressing ingredients or use a blender on med/low for 1 minute to puree the ingredients.
  2.  Drizzle over a salad, grilled veggies, fish, chicken, pork or steak.
  3.  This salad dressing is very thin very tasty!
