Grilled Pizza at your campsite

Grilled Pizza

Serves 4-6

Ingredients

For the Dough

1 package of ready made pizza dough (Trader Joe's)

OR  1 package of Pillsbury Hot Roll Mix and the following items to form a dough:

1 1/4 cups warm water (105 – 115 degrees)

3 tablespizza off grill readypoon extra virgin olive oil

Sauces

2/3 cups ready sauce: pesto, bbq sauce,pizza sauce or olive oil

1 cup sliced vegetables (mushrooms, onions peppers, or both).

1 cup shredded mozzarella, soft cheese or vegan cheese

Directions

If using Hot Roll mix, add flour and yeast packet from the box to a medium bowl.  Add warm water and olive oil, stirring to combine and the dough will form a ball.  Place ball of dough (or ready made dough) on a lightly floured cutting board, divide the dough into 4 similar size balls. Stretch the dough using your finger tips stretching the dough to approximately 1/8″ thick. Lightly oil both sides of each pizza.  Take pizza dough on a cutting board or cookie sheet to the grill. Oil grill lightly. Using tongs and a spatula place dough onto direct medium/high heat.  The dough will bubble some and grill marks will form on the underside of the dough within 1-3 minutes.  Carefully lift the dough off the grill when the dough is slightly dry and grill marks are present on the underside. Place dough grill mark side up on the cookie sheet. Off heat, add sauce of choice (to the grill marked side of the dough) using pizza sauce or pesto or bbq sauce or olive oil etc. and then add any sliced meats or vegetables (mushrooms, sliced red or yellow peppers, onions, and then shredded or soft cheese.  Leave  1/2″ of the outer border of the pizza plain (no sauce or toppings).  Return pizzas to the grill on medium/low setting with the lid down for another 4 minutes or until cheese has melted and grill marks have formed on the underside of the pizza.  Remove pizzas from the grill with the assistance of the spatula and tongs.  Place the pizzas on a cookie sheet.  If you like top the finished pizza's with salad toppings like fresh arugula and a drizzle of salad dressing.  Cut in serving portions and serve.
