Chilled Cantaloupe Soup

This is a refreshing summer dinner soup, dessert or beverage that is kicked up with a little sherry.

Serves  4


1/2 cantaloupe

1/2 cup Amontillado style Sherry

2 tablespoons honey

Juice of 1 lime


Cut cantaloupe in half.  Save half in the refrigerator covered for another use.  Remove peel and seeds from the cantaloupe and dice the cantaloupe into 1″ cubes.

Combine all ingredients in a Vitamix or other blender and mix on high until the ingredients are combined and the cantaloupe is liquefied.

Pour into a soup bowl or glass and enjoy.
