Here is a quick, easy and refreshing cole slaw that is perfect for summer picnics and BBQ’s or grilled foods.

Serves 2 – 3  however you can easily increase or decrease ll ingredients proportionally to fit your needs.


6 oz                   (1/2 bag) of pre prepared cole slaw salad mix

1                        green onion, rinsed and sliced 1/8″ slices

1 tbsp.               red onion, finely diced

1                        orange, cut in slices with peep and pith removed (or 1 small snack sized container of mandarin oranges).

2 tbsp.               dried cranberries

1/4 cup              peanuts

1/4 cup             * Asian Sesame dressing (Panera, ready made available at grocers)

                          pepper to taste


  1.  In a medium bowl add cole slaw mix.
  2.  Using a cutting board, slice the orange removing the pith and peel (or drain a snack pack ~1/2 cup of mandarin oranges, chop the green onion, red onion and add to the bowl.
  3.  Add peanuts and dried cranberries to the bowl.  Toss salad and serve.
  4.  *  To make the dressing homemade –  Using a small bow add 1 part rice wine vinegar to 3 – 4 parts vegetable oil or x-tra virgin          olive oil.  Add honey, pepper and sesame seeds (to your taste) then whisk pour over the slaw mix, toss and serve.
